ENERGY BALLS

This is a super simple and versatile recipe. I started making my energy balls with ripe bananas but after running out I had to get inventive and came up with the following recipe! Feel free to play around with the ingredients and make yourself a super healthy alternative for a snack or pudding.

You will need

 150 g Ground Almonds
 100 g Raisins (or other preferred dried fruit)
 50 g Pecans (or other preferred nut)25
 25 g Coconut flakes
 ¾ tbsp Coconut oil
 1 tbsp Honey (runny or melted) or Maple syrup if vegan
 25 g milled chia seeds

Method

Put the heaped tablespoons of coconut oil and honey (if using and if its not already runny) into a pan on a low heat until melted.

Blend the pecans and raisins in a high powered blender until almost paste like. I have also used dried cranberries which were delicious but you can have a play yourself!

Add the ground almonds, coconut flakes and milled chia seeds into a bowl.

Then add the blended dried fruit and nuts, followed by the coconut oil. Best if you add bit by bit and stir until you have a mixture that easily holds.

Taking approximately a heaped tablespoon of them mixture, roll it into a ball and then pop onto a cooling rack/wooden board. Don't worry if it seems a bit sticky or loose, one the coconut oil cools it will solidify and then ball will hold its shape.

After you have rolled all the mixture (I made approximately 12-14 from this mix) you can store it in the fridge. When you find yourself craving something sweet, grab yourself one off these healthy numbers!
